Description
A quick and easy beef taco rice skillet made in one pan with ground beef, taco seasoning, rice, and melted cheese. Perfect for busy nights and meal prep.
Ingredients
1 lb ground beef
1 cup uncooked white rice (or 2 cups cooked)
1 can diced tomatoes with green chilies
1 cup corn
1 packet taco seasoning
1.5 cups shredded cheddar cheese
2 cups beef broth or water
Salt and pepper to taste
Optional toppings: sour cream, avocado, jalapeños, green onions
Instructions
1. Brown ground beef in a large skillet over medium heat.
2. Add taco seasoning, tomatoes, corn, and rice. Stir to combine.
3. Pour in beef broth. If using uncooked rice, cover and simmer 18–20 minutes. If cooked rice, simmer 5–7 minutes uncovered.
4. Top with shredded cheese and cover to melt.
5. Add toppings and serve hot.
Notes
You can use leftover rice to reduce cooking time.
Add beans or veggies to make it more hearty.
Freeze in containers for up to 3 months.
