Description
A creamy, crispy, cheesy crockpot tater tot casserole that’s perfect for family dinners or casual gatherings. Made with ground beef, veggies, and golden tots.
Ingredients
1 lb ground beef
1 can cream of mushroom soup
1 cup sour cream (optional)
1 small onion, diced
1–2 cups shredded cheddar cheese
1 can green beans or corn
1 bag frozen tater tots
Instructions
1. Brown ground beef with diced onions in a skillet, then drain.
2. Stir in cream of mushroom soup and sour cream if using.
3. Layer half the tater tots at the bottom of a greased crockpot.
4. Spread the beef mixture evenly over the tots.
5. Top with remaining tater tots and half of the shredded cheese.
6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
7. 30 minutes before serving, sprinkle on remaining cheese.
8. Let cheese melt, then serve hot.
Notes
To make it vegetarian, replace beef with sautéed mushrooms and add extra veggies.
Substitute cream of mushroom with cream of chicken, celery, or a homemade sauce.
Add jalapeños or chili beans for a cowboy casserole twist.
