Ingredients
3 cups shredded cooked chicken (rotisserie or baked) 1 (15 oz) jar Alfredo sauce (or homemade) 1 ½ cups ricotta or cottage cheese 2 cups shredded mozzarella ½ cup grated Parmesan 9–12 no-boil lasagna noodles 2 cups baby spinach (optional) 1 tsp garlic powder 1 tsp Italian seasoning Salt and pepper to taste
Instructions
1. Grease your slow cooker insert. 2. Spread a thin layer of Alfredo sauce at the bottom. 3. Layer lasagna noodles, breaking to fit as needed. 4. Spread half of the ricotta over the noodles. 5. Add a layer of shredded chicken. 6. Sprinkle mozzarella and Parmesan. 7. Repeat layers, ending with Alfredo and cheese. 8. Cover and cook on LOW for 4–6 hours. 9. Let rest 10–15 minutes before serving.
Notes
Use cooked chicken to speed prep time. For added veggies, mix spinach into the ricotta layer. Thin thick Alfredo sauce with a splash of milk. Leftovers reheat beautifully and freeze well.
