Ingredients

2 cups cooked shredded chicken

6 strips thick-cut bacon, chopped

1 tablespoon olive oil

1 small onion, diced

2 ribs celery, chopped

2 carrots, sliced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream or half-and-half

2 cups diced potatoes or 1 cup cooked rice

1 cup fresh spinach (optional)

1 tsp dried thyme

Salt and pepper to taste


Instructions

1. Cook bacon in a large pot until crisp. Remove and set aside.

2. Add olive oil to bacon fat, then sauté onion, celery, and carrots until soft.

3. Add garlic and thyme. Cook 1 more minute.

4. Pour in broth, add chicken and potatoes/rice. Simmer until tender (15–20 mins).

5. Reduce heat, stir in cream and spinach. Return bacon, season to taste.

Notes

Use rotisserie chicken for quicker prep.

Add cheddar for a cheesy twist.

Swap potatoes with cauliflower for a low-carb version.
