Description
A cozy, creamy chicken and potato soup perfect for weeknights or family dinners easy to make and freezer-friendly.
Ingredients
1 lb boneless chicken breast or thighs
2 large Yukon Gold potatoes, diced
1 small onion, diced
2 garlic cloves, minced
4 cups chicken broth
1 cup milk or cream (optional)
1 tbsp olive oil or butter
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Sauté onion and garlic in oil until soft.
2. Add chicken, potatoes, broth, and thyme. Simmer for 25–30 minutes.
3. Remove chicken, shred it, and return it to the pot.
4. Add milk or cream and season with salt and pepper.
5. Simmer for 5 more minutes until creamy and hot.
6. Serve with parsley and crusty bread.
Notes
Use rotisserie chicken for a faster version.
Mash some potatoes to thicken the soup naturally.
Skip cream for a dairy-free version.
