Ingredients

1 lb chicken thighs (boneless or bone-in)

8 oz mixed wild mushrooms (cremini, shiitake, or oyster)

3 garlic cloves, minced

1 medium onion, diced

5 cups chicken or vegetable broth

1 tsp thyme (fresh or dried)

½ cup cream or coconut milk

2 tbsp butter or olive oil

Salt and black pepper to taste


Instructions

1. Heat butter or olive oil in a large pot over medium heat.

2. Add diced onions and minced garlic; sauté until fragrant and soft.

3. Add mushrooms and cook until golden brown and tender.

4. Stir in chicken and thyme, cooking for 2–3 minutes.

5. Pour in broth, bring to a gentle simmer, and cook for 20 minutes until chicken is tender.

6. Remove chicken, shred it, and return it to the pot.

7. Stir in cream or coconut milk, season with salt and pepper, and simmer for 5 more minutes.

8. Serve hot, garnished with fresh thyme or parsley.

Notes

For a dairy-free version, replace cream with coconut milk.

Add a squeeze of lemon before serving for a brighter flavor.
