Creamy, cheesy, and packed with smoky bacon, this Chicken Bacon Ranch Pasta is your go-to comfort food for weeknights or gatherings.
Ingredients
12 oz pasta (penne or rotini)
6 strips bacon
1 lb boneless chicken breast, diced
1 packet ranch seasoning mix
2 cups shredded sharp cheddar
1 ½ cups whole milk or half-and-half
Salt & pepper to taste
2 tbsp bacon drippings or butter
Fresh parsley for garnish (optional)
Instructions
1. Cook bacon in a cold skillet over medium heat until crisp. Remove and set aside.
2. Reserve 2 tablespoons of bacon fat. Season diced chicken with salt, pepper, and ranch mix.
3. Sear chicken in bacon fat until golden and fully cooked. Remove from heat.
4. Cook pasta in salted water until al dente. Reserve ½ cup pasta water before draining.
5. Warm milk in a large skillet over medium heat. Stir in remaining ranch seasoning.
6. Remove from heat. Stir in shredded cheddar until smooth and creamy.
7. Add pasta and chicken to the cheese sauce. Add pasta water if needed for consistency.
8. Fold in bacon just before serving. Garnish with parsley and extra cheese if desired.
Notes
Use cold, freshly shredded cheese for a smooth sauce that won’t clump.
Stir in cooked spinach, roasted broccoli, or jalapeños for extra flavor and nutrition.
To reheat, add a splash of milk or pasta water to maintain creaminess.
