Description

This cranberry orange bread is moist, naturally sweet, and alcohol-free—perfect for brunch, gifting, or cozy snacks.


Ingredients

2 cups all-purpose flour

1.5 tsp baking powder

0.5 tsp baking soda

0.5 tsp salt

1 cup fresh or frozen cranberries

Zest of 1 orange

1/2 cup orange juice

2/3 cup sugar

1 egg

1/2 cup vegetable oil or melted butter

1/2 cup plain yogurt or sour cream


Instructions

1. Preheat oven to 350°F (175°C); grease a 9×5” loaf pan.

2. Whisk flour, baking powder, baking soda, and salt in a large bowl.

3. In another bowl, mix sugar, egg, orange zest, juice, oil, and yogurt until smooth.

4. Combine wet and dry ingredients gently—do not overmix.

5. Toss cranberries with 1 tsp flour and fold them into the batter.

6. Pour into loaf pan and smooth the top.

7. Bake for 50–60 minutes until a toothpick comes out clean.

8. Cool in pan 10 minutes, then on a rack.

9. Slice and serve!

Notes

Use Greek yogurt for added protein.

Substitute fresh cranberries with rehydrated dried cranberries.

Add chopped walnuts or pecans for texture.

Glaze with orange icing for extra sweetness.
