Description
A rich and flavorful one-pot pasta with Cajun spices, tender chicken, smoky sausage, and a creamy sauce. Quick enough for weeknights, tasty enough for weekends.
Ingredients
2 chicken breasts, diced
8 oz smoked sausage, sliced
8 oz penne pasta
1 tbsp olive oil
1 tbsp Cajun seasoning
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan
3 cloves garlic, minced
1/2 onion, chopped
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Heat oil in a large skillet. Cook sausage until browned. Remove and set aside.
2. Add chicken to the pan, season with Cajun seasoning, and cook until golden.
3. Add garlic and onion, cook until fragrant.
4. Pour in broth, cream, and uncooked pasta. Stir well.
5. Bring to a simmer and cook for 12-15 minutes, stirring often.
6. Stir in Parmesan and return sausage to the pan.
7. Simmer 2 more minutes. Adjust seasoning.
8. Garnish with parsley and serve hot.
Notes
Use half-and-half for a lighter version.
Add spinach or bell peppers for extra veggies.
Adjust Cajun seasoning based on your spice preference.
