Description
A creamy and comforting chicken broccoli soup that’s perfect for busy weeknights. Loaded with protein and veggies, and ready in 30 minutes.
Ingredients
2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
2 tbsp flour (or cornstarch for gluten-free)
4 cups chicken broth
1 cup milk (or heavy cream)
2 cups cooked shredded chicken
2 cups broccoli florets
1 cup shredded cheddar cheese
Salt and pepper to taste
Instructions
1. In a large pot, melt butter over medium heat. Sauté onions until soft, then add garlic and cook 1 minute.
2. Stir in flour and cook for 1 minute more to form a roux.
3. Gradually whisk in chicken broth and milk until smooth. Bring to a simmer.
4. Add chicken and broccoli. Cook for 10–15 minutes until broccoli is tender.
5. Stir in shredded cheese and season to taste. Simmer until thick and creamy.
6. Serve hot with bread or garnish with fresh herbs.
Notes
For extra richness, use heavy cream instead of milk.
Use frozen broccoli if fresh isn’t available just add it in the last 10 minutes.
This soup freezes well if you leave out the dairy until reheating.
