Description
A creamy and comforting chicken orzo soup packed with tender chicken, pasta, veggies, and a rich broth ready in under 45 minutes.
Ingredients
2 cups cooked shredded chicken 1 cup dry orzo pasta 1 medium onion, diced 2 carrots, sliced 2 celery stalks, diced 2 cloves garlic, minced 6 cups chicken broth 1/2 cup heavy cream or half-and-half 1 cup fresh spinach (optional) 1 tbsp olive oil or butter Salt and pepper to taste 1/2 tsp dried thyme
Instructions
1. Heat olive oil in a large pot over medium heat. 2. Add onion, carrots, and celery; sauté for 5–7 minutes. 3. Stir in garlic and cook for another 30 seconds. 4. Pour in the chicken broth and bring to a boil. 5. Add the orzo and reduce to a simmer; cook 7–9 minutes. 6. Stir in the cooked chicken and cream. 7. Add spinach if using and season with salt, pepper, and thyme. 8. Simmer gently for 2–3 minutes more. 9. Serve hot and enjoy.
Notes
To avoid mushy pasta, cook orzo until just al dente. Soup thickens as it sits add broth when reheating. Freeze soup before adding orzo for best texture.
