Description

Creamy garlic chicken skillet made with seared chicken thighs, garlic, parmesan, spinach, and a luscious cream sauce. One-pan comfort dinner ready in 30 minutes.


Ingredients

6 bone-in skin-on chicken thighs

Salt and cracked pepper

4 thick-cut bacon slices

1 small yellow onion, diced

1 pint cherry tomatoes

6 garlic cloves, minced

1 can cream of chicken or cream of mushroom

1 cup chicken broth

1 tbsp Italian seasoning

3 cups baby spinach

1/4 cup grated parmesan

Red pepper flakes (optional)


Instructions

1. Preheat oven to 425°F. Pat chicken dry, season with salt and pepper.

2. Sear bacon in a large skillet, remove when crisp.

3. In same skillet, sear chicken thighs skin-side down for 5 minutes. Flip and cook 5-8 more minutes. Set aside.

4. Add onions and cherry tomatoes, cook until tender. Stir in garlic until fragrant.

5. Add cream, broth, seasoning, spinach. Stir and simmer until spinach wilts.

6. Add parmesan and stir until melted into sauce.

7. Return bacon and chicken to skillet. Spoon sauce over. Bake for 10–15 mins.

8. Serve hot with mashed potatoes, rice, or vegetables.

Notes

Use boneless chicken for quicker cook time. Add mushrooms for earthy depth. Taste sauce before baking and adjust seasoning.
