Creamy garlic chicken with spinach is a comforting one-skillet meal made with juicy chicken, rich garlic cream sauce, and fresh spinach. Perfect for busy nights.
Ingredients
2 large chicken breasts, halved into cutlets
2 tablespoons olive oil
4 garlic cloves, minced
1 cup heavy cream
2 cups fresh spinach
1/4 cup grated parmesan
Salt and pepper to taste
Optional: red pepper flakes or chicken broth for thinning
Instructions
1. Season and sear chicken in olive oil until golden; remove and set aside.
2. In the same pan, sauté minced garlic until fragrant.
3. Add heavy cream; simmer until slightly thickened.
4. Stir in spinach and parmesan; cook until wilted.
5. Return chicken to pan; simmer 5 minutes more.
6. Serve hot with your choice of sides.
Notes
Add sun-dried tomatoes or mushrooms for variation.
To lighten, use half-and-half or dairy-free cream.
Store in the fridge up to 3 days; reheat gently with broth or cream.
