Description
Crispy Parmesan zucchini bites that are golden, crunchy, and perfect as a quick snack or appetizer.
Ingredients
2 medium zucchini
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (panko preferred)
1 egg
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
1. Preheat oven to 425°F.
2. Slice zucchini into even rounds.
3. Pat zucchini dry with paper towels.
4. Beat egg in a bowl.
5. Mix Parmesan, breadcrumbs, garlic powder, salt, and pepper.
6. Dip zucchini into egg, then coat with mixture.
7. Place on baking sheet in single layer.
8. Bake for 20–25 minutes, flipping halfway through.
9. Serve immediately for best crispiness.
Notes
Use fresh Parmesan for better flavor.
