Ingredients
4 boneless chicken breasts
1.5 pounds baby potatoes
4 tablespoons butter
4 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon chopped parsley
1/2 cup chicken broth (optional)
Instructions
1. Wash and cut potatoes into evenly sized pieces.
2. Season chicken with salt, pepper, and Italian seasoning.
3. Place potatoes at the bottom of the crockpot.
4. Add chicken on top of the potatoes.
5. Melt butter and mix with minced garlic.
6. Pour garlic butter mixture over chicken and potatoes.
7. Add chicken broth if desired.
8. Cook on low for 6–7 hours or high for 3–4 hours.
9. Garnish with parsley before serving.
Notes
Use Yukon Gold or baby potatoes for best texture.
Chicken thighs can replace chicken breasts.
Add vegetables like carrots or green beans for variation.
