Description

These easy creamy chicken enchiladas are filled with a rich, cheesy chicken mixture and topped with a luscious sauce. They’re the perfect comfort food for weeknight dinners or family gatherings.


Ingredients

2 cups shredded cooked chicken
1 cup sour cream
4 oz cream cheese, softened
1/2 cup canned green chiles
1/2 tsp garlic powder
1/2 tsp cumin
Salt and pepper to taste
8 flour tortillas
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup enchilada sauce or creamy white sauce


Instructions

1. Preheat oven to 375°F. Lightly grease a 9×13 baking dish.
2. Warm tortillas so they’re easy to roll.
3. In a bowl, mix chicken, sour cream, cream cheese, green chiles, garlic powder, cumin, salt, and pepper.
4. Spoon filling into tortillas, roll up, and place seam-side down in the dish.
5. Spread sauce over top, then sprinkle with cheeses.
6. Bake for 25–30 minutes until bubbly and golden.
7. Let rest 5 minutes before serving.

Notes

Use rotisserie chicken for faster prep.
Add jalapeños or chili flakes for extra spice.
Can be made ahead and refrigerated overnight before baking.
