Instructions
1. Preheat oven to 375°F and lightly grease a muffin tin.
2. Whisk eggs in a bowl and add vegetables, cheese, salt, and pepper.
3. Pour mixture evenly into muffin cups.
4. Bake for 18–20 minutes until set.
5. Cool slightly before storing in airtight containers.
