Description
This easy Mexican ground beef dinner is packed with flavor and ready in under 30 minutes. Perfect for busy weeknights, tacos, or rice bowls.
Ingredients
1 lb ground beef (80/20 preferred)
1/2 onion, finely chopped
2 garlic cloves, minced
1 tbsp tomato paste
1 can (14 oz) diced tomatoes (drained slightly)
1 tsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
1/2 tsp dried oregano
Salt to taste
Optional: black beans, corn, jalapeño, shredded cheese, tortillas
Instructions
1. Heat a large skillet over medium heat. Add ground beef and cook until browned.
2. Drain excess fat, then add chopped onion and garlic. Sauté for 3–4 minutes until softened.
3. Stir in tomato paste and spices (chili powder, cumin, paprika, oregano, salt).
4. Add diced tomatoes and stir well. Simmer for 8–10 minutes until mixture thickens.
5. Optional: Add beans or corn at this stage. Simmer an additional 2–3 minutes.
6. Serve hot in tacos, over rice, or in bowls. Top with cheese, avocado, or your favorite toppings.
Notes
To stretch the recipe, add a can of black beans or corn.
Use leftovers for taco salads, burritos, or stuffed peppers.
Spice level can be adjusted by adding jalapeño or cayenne.
