A quick and flavorful one-pan dinner that brings sizzling Tex-Mex chicken fajitas to your table in just 25 minutes.
Ingredients
1 lb boneless, skinless chicken breasts (thinly sliced) 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 green bell pepper, sliced 1 red onion, thinly sliced 2 tbsp olive oil 2 tsp chili powder 1 tsp cumin 1 tsp smoked paprika 1/2 tsp garlic powder Salt and pepper to taste Juice of 1 lime Optional: tortillas, sour cream, guacamole, shredded cheese, fresh cilantro
Instructions
1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. 2. Add sliced chicken, sprinkle with all seasonings, and cook for 5–6 minutes until golden and cooked through. 3. Remove chicken from skillet and set aside. 4. Add remaining olive oil and sauté sliced bell peppers and onions for 3–4 minutes until softened. 5. Return chicken to skillet and toss with vegetables. Add lime juice and stir to combine. 6. Serve immediately with tortillas or over rice. Add your favorite toppings.
Notes
Slice ingredients evenly for faster, even cooking. Use a cast iron skillet for the best sear. To make it spicier, add jalapeños or chipotle powder.
