Ingredients

1 lb ground beef

2 tablespoons oil

1 lb Yukon Gold potatoes, diced

1 small onion, chopped

1 bell pepper, chopped

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon oregano

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: shredded cheese, hot sauce, green onions


Instructions

1. Heat oil in skillet, add diced potatoes. Cook 6–8 mins until golden.

2. Add onion and bell pepper; sauté 2–3 mins.

3. Add ground beef, break it apart as it browns.

4. Stir in spices, Worcestershire, and mustard.

5. Cook until potatoes are tender and beef is browned.

6. Garnish with green onions or cheese if desired.

7. Serve hot as-is or over rice.

Notes

Use Yukon Gold potatoes for best texture.
