Ingredients

1 lb ground beef

1 cup uncooked white rice

1 small onion, diced

2 garlic cloves, minced

1 can (14.5 oz) diced tomatoes

2 cups beef broth

1 tsp Italian seasoning

Salt and pepper to taste

1½ cups shredded cheddar cheese


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.

2. In a large skillet, cook ground beef, onions, and garlic over medium heat until browned. Drain excess grease.

3. Stir in uncooked rice, tomatoes (with juices), beef broth, and seasonings. Simmer for 5 minutes.

4. Pour mixture into prepared baking dish and spread evenly.

5. Top with shredded cheese.

6. Cover with foil and bake for 35 minutes.

7. Uncover and bake for an additional 10 minutes until cheese is bubbly and golden.
