Description
A juicy, honey glazed roast chicken infused with fresh citrus and thyme. Simple, flavorful, and alcohol-free—perfect for any occasion.
Ingredients
1 whole chicken (4–5 lbs)
1/4 cup honey
2 tablespoons olive oil
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 lemon, sliced
1 orange, sliced
5–6 sprigs fresh thyme
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. In a bowl, mix honey, olive oil, mustard, garlic, and citrus juice from 1/2 lemon and 1/2 orange.
3. Place chicken in a roasting pan. Pat dry, then rub glaze under and over skin.
4. Stuff cavity with lemon and orange halves and thyme.
5. Arrange citrus slices and thyme sprigs around chicken.
6. Roast uncovered, basting with glaze every 20 minutes.
7. Roast for 1 hour 15 minutes, or until internal temp reaches 165°F.
8. Let rest for 10 minutes before carving. Serve with pan juices.
Notes
Make glaze a day ahead for stronger flavor.
Use rosemary instead of thyme if preferred.
Leftovers are great for wraps or salads.
