Ingredients

1 cup fresh spinach, chopped
1/2 cup shredded cheddar cheese
1/2 cup diced bell peppers
Salt and black pepper to taste
For the Overnight Oats:
1 cup rolled oats
1 cup Greek yogurt
1 cup milk of choice
2 tablespoons chia seeds
1 tablespoon nut butter
1/2 cup mixed berries
1 tablespoon honey (optional)
Instructions
1. Preheat oven to 350°F and lightly grease a muffin tin.
2. In a large bowl, whisk eggs and milk until smooth.
3. Stir in spinach, bell peppers, cheese, salt, and pepper.
4. Pour mixture evenly into muffin cups.
5. Bake for 18–22 minutes until set and lightly golden.
