Description
A warm, festive side dish of roasted sweet potatoes glazed in maple syrup and topped with crunchy toasted pecans. Perfect for holidays or weeknights.
Ingredients
3 medium sweet potatoes, peeled and cubed
3 tbsp pure maple syrup
1/2 cup pecans, roughly chopped
1 tsp ground cinnamon
1/4 tsp cayenne pepper (optional)
1/2 tsp chili powder
1/4 tsp kosher salt
2 tbsp butter or vegan substitute
1 tbsp olive oil
Instructions
1. Preheat oven to 400°F. Line a baking sheet with parchment or a silicone mat.
2. Toss sweet potatoes in olive oil and salt. Spread on baking sheet.
3. Roast for 25 minutes, flipping halfway.
4. Meanwhile, melt butter and mix in maple syrup, cinnamon, and cayenne.
5. Brush glaze on sweet potatoes and return to oven for 10–15 mins.
6. Add chopped pecans in the last 5–7 minutes of roasting.
7. Remove, serve warm, and garnish with orange zest if desired.
Notes
Make ahead by prepping ingredients up to 2 days in advance.
Use non-stick foil or a silicone mat to prevent sticking.
For extra crunch, toast pecans separately and sprinkle before serving.
