Ingredients
1 lb ground beef (80/20 recommended)
1 tablespoon olive oil
1 small onion, diced
1 bell pepper, chopped
2 cups diced potatoes (small cubes)
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning
1 cup beef broth
1 cup shredded cheddar cheese (optional)
2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add ground beef and cook until browned, breaking it apart with a spoon.
3. Drain excess grease if necessary.
4. Add diced onion and bell pepper and cook for 3–4 minutes until softened.
5. Stir in garlic, paprika, salt, pepper, and Italian seasoning.
6. Add diced potatoes and pour in beef broth.
7. Cover the skillet and simmer for 15–20 minutes, stirring occasionally, until potatoes are tender.
8. Remove lid and cook an additional 2–3 minutes if needed to reduce excess liquid.
9. Sprinkle shredded cheese on top and cover briefly to melt.
10. Let rest for 5 minutes, garnish with parsley, and serve warm.

Use 80/20 ground beef for best flavor and moisture.
Cut potatoes into small, even cubes for faster cooking.
You can substitute rice or pasta for potatoes if preferred.
