Ingredients

2 large eggs

1 cup Greek yogurt

1/2 cup rolled oats or oat flour

1 scoop vanilla protein powder

1/2 tsp cinnamon

1 tsp baking powder

1 tbsp maple syrup or mashed banana

1/4 cup milk (any kind)

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C).

2. Grease or line a 9×13 inch baking dish.

3. Mix all ingredients in a bowl until smooth.

4. Pour into dish and spread evenly.

5. Bake for 22–25 minutes until center is set.

6. Cool slightly before slicing into squares.

7. Top with berries, yogurt, or nut butter.

Notes

Store leftovers in fridge for up to 5 days or freeze for 2–3 months.
