Description
A creamy and flavorful pesto chicken pasta made in just 20 minutes perfect for busy nights or cozy dinners.
Ingredients
2 boneless skinless chicken breasts
8 oz pasta (penne, rotini, or farfalle)
1/2 cup basil pesto
1/2 cup heavy cream
2 cloves garlic, minced
2 tbsp olive oil
1/4 cup grated parmesan cheese
Salt and pepper, to taste
Instructions
1. Bring salted water to a boil and cook pasta al dente.
2. While pasta cooks, season chicken with salt and pepper.
3. Heat olive oil in skillet; sear chicken until golden and cooked through.
4. Remove chicken, sauté garlic in the same pan.
5. Add pesto and cream; stir and let simmer for 2 minutes.
6. Slice chicken and return to pan; add pasta and toss.
7. Sprinkle with parmesan and serve.
Notes
You can substitute heavy cream with half-and-half or chicken broth for a lighter version.
Add spinach, sun-dried tomatoes, or crushed red pepper for extra flavor.
