Description
These quick chicken quesadillas are crispy, cheesy, and come together in just 15 minutes! Perfect for weeknight dinners or easy lunches.
Ingredients
2 large flour tortillas
1 cup shredded cooked chicken
1 cup shredded cheese (cheddar & Monterey Jack)
1 tbsp butter or oil
Optional: salsa, jalapeños, cilantro
Instructions
1. Heat skillet over medium heat and add butter or oil.
2. Place one tortilla in the skillet, sprinkle half the cheese evenly.
3. Add shredded chicken on top of cheese layer.
4. Sprinkle remaining cheese and top with second tortilla.
5. Cook 2–3 minutes per side until golden and crispy.
6. Remove, slice into wedges, and serve hot with dips.
Notes
Use leftover or rotisserie chicken to save time.
Avoid overfilling for maximum crispiness.
To reheat, use a skillet or oven not microwave.
