Description
A quick ground beef rice dinner made in one pan with pantry staples. It’s flavorful, fast, and perfect for busy weeknights.
Ingredients
1 lb ground beef
1 cup uncooked rice (or 2 cups cooked)
2 cups beef or chicken broth
1 small onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
Optional: shredded cheese, green onions, hot sauce
Instructions
1. Heat olive oil in a skillet over medium heat. Add diced onion and garlic; cook until softened.
2. Add ground beef; cook until browned and crumbled. Drain any excess fat.
3. Stir in uncooked rice and toast for 1–2 minutes.
4. Pour in broth, season with salt and pepper, and bring to a boil.
5. Cover and reduce heat to low. Simmer for 18–20 minutes or until rice is tender.
6. Fluff with a fork, top with optional cheese or herbs, and serve hot.
Notes
Use pre-cooked rice to cut cook time in half.
Add frozen veggies for extra nutrition.
Spice it up with taco seasoning or curry paste.
