This savory egg breakfast skillet is a quick, one-pan meal packed with protein, crispy potatoes, and veggies. Perfect for busy mornings or weekend brunch.
Ingredients
3–4 large eggs
2 medium potatoes, diced
1/2 onion, chopped
1/2 bell pepper, chopped
1 garlic clove, minced
1/2 cup shredded cheddar cheese
2 tbsp olive oil or butter
Salt, pepper, smoked paprika to taste
Optional: cooked sausage or bacon
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add diced potatoes, season, and cook until golden (6–8 mins).
3. Stir in onion, bell pepper, garlic, and optional meat. Cook for 3–4 mins.
4. Create wells in the mix and crack in eggs. Cover and cook 3–5 mins.
5. Top with cheese, cover for 1 minute, and serve hot.
Notes
Use leftover potatoes to save time.
Try feta, pepper jack, or mozzarella for cheese variety.
Swap potatoes for cauliflower to reduce carbs.
