Ingredients
1 lb ground beef
1/2 onion, diced
2 cloves garlic, minced
1 can diced tomatoes (14.5 oz)
1/2 cup frozen corn
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp oregano
Salt and pepper to taste
1 tbsp olive oil (if using lean beef)
1/2 cup shredded cheese (optional)
Instructions
1. Heat a large skillet over medium-high heat and add oil if using lean beef.
2. Add ground beef and break it up with a spatula. Cook until browned.
3. Drain excess fat if needed.
4. Add onion and garlic; sauté for 2-3 minutes until fragrant.
5. Stir in diced tomatoes, corn, and spices.
6. Simmer for 8-10 minutes to blend flavors.
7. Sprinkle cheese on top, cover for 2 minutes to melt.
8. Serve hot over rice, pasta, or with tortillas.
Notes
Use lean ground beef for a lighter option.
Double the recipe for leftovers.
Add canned beans or cooked pasta to stretch the meal.
