Ingredients

1 lb ground beef or turkey

1 cup uncooked white or brown rice

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can diced tomatoes (or 1 cup salsa)

1 ½ cups chicken or beef broth

1 cup shredded cheddar or Mexican blend cheese

Optional: black beans, corn, jalapeños, avocado


Instructions

1. In a large skillet, brown the ground beef until fully cooked.

2. Add diced onion and garlic; sauté until softened.

3. Stir in taco seasoning, diced tomatoes, and uncooked rice.

4. Pour in broth and bring to a boil, then reduce heat.

5. Cover and simmer 15–18 minutes until rice is tender.
