Slow Cooker Beef and Potato Stew is a hearty and comforting dish made with tender beef, soft potatoes, and rich broth.
Ingredients
2 lbs beef chuck, cubed
4 potatoes, chopped
3 carrots, sliced
1 onion, chopped
3 cups beef broth
2 cloves garlic
1 tsp thyme
1 bay leaf
Salt and pepper
Instructions
1. Cut and season beef
2. Chop vegetables
3. Add all ingredients to slow cooker
4. Pour in broth and add herbs
5. Cook on low for 7–8 hours or high for 4–5 hours
6. Stir and adjust seasoning before serving
