This Slow Cooker Chicken Fettuccine Alfredo is the ultimate comfort food rich, creamy, and made with minimal effort. It’s a cozy dinner solution that’s family-friendly and full of flavor.
Ingredients
2 boneless skinless chicken breasts (about 1.5 lbs)
2 1/2 cups heavy cream
1 1/2 cups low-sodium chicken broth
1/4 cup butter (cubed)
1/2 tsp salt
1/2 tsp black pepper
2 garlic cloves, minced
12 oz dry fettuccine (or penne/rotini)
1 1/2 cups freshly grated parmesan cheese
Chopped parsley (for garnish)
Instructions
1. Place chicken, broth, cream, butter, garlic, salt, and pepper into slow cooker.
2. Cover and cook on low for 3–4 hours or high for 2 hours until chicken is cooked.
3. Remove chicken, shred or slice, and set aside.
4. Add pasta to the slow cooker and stir.
5. Cook on high for 25–30 minutes, stirring once or twice.
6. Stir in parmesan cheese and return chicken to the pot.
7. Mix everything gently and garnish with parsley before serving.
Notes
Use freshly grated parmesan for a smoother sauce.
If using long pasta, break it in half before adding.
Add veggies like broccoli or spinach in the last 30 minutes.
Stir pasta halfway through to prevent clumping.
