Description
Spicy Chicken Lo Mein is a bold, easy stir-fry with tender chicken, chewy noodles, and a homemade spicy sauce. A fast, one-pan dish perfect for weeknights.
Ingredients
8 oz lo mein noodles or spaghetti
1 lb boneless skinless chicken breasts, sliced thin
1 tbsp vegetable oil
1 red bell pepper, sliced
1 carrot, julienned
3 green onions, chopped
2 cloves garlic, minced
1 tsp fresh ginger, minced
1 tbsp chili garlic sauce (adjust to taste)
1/4 cup low-sodium soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
1 tsp brown sugar
Instructions
1. Cook noodles according to package directions. Drain and set aside.
2. Heat oil in a large skillet or wok over medium-high heat.
3. Add chicken and cook until browned and cooked through. Remove and set aside.
4. In the same pan, stir-fry bell pepper, carrot, and green onions for 2–3 minutes.
5. Add garlic and ginger; cook until fragrant, about 30 seconds.
6. Return chicken to the pan.
7. In a bowl, whisk together chili garlic sauce, soy sauce, oyster sauce, sesame oil, and brown sugar.
8. Pour sauce into the pan and toss to coat evenly.
9. Add noodles, stir until fully coated and heated through.
10. Serve hot, topped with extra green onions if desired.
Notes
Adjust chili garlic sauce for more or less heat.
Substitute noodles with whole wheat spaghetti or zucchini noodles.
Leftovers keep well in the fridge for up to 3 days.
