Description
This sweet chili chicken stir fry is a 30-minute one-pan wonder, packed with juicy chicken, crisp veggies, and a tangy-sweet sauce.
Ingredients
1 lb chicken breast, thinly sliced
1 red bell pepper, sliced
1 cup snap peas
1 carrot, julienned
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp oil for cooking
1/2 cup sweet chili sauce
1 tsp lime juice
1/2 tsp sesame oil
Optional: sesame seeds, green onions for garnish
Instructions
1. In a bowl, mix chicken with soy sauce and garlic. Let sit for 10 minutes.
2. Heat oil in a skillet over medium-high heat. Sear chicken until golden, about 5-6 minutes.
3. Remove chicken and set aside. In the same pan, stir fry vegetables until slightly tender.
4. Return chicken to the pan. Add sweet chili sauce, lime juice, and sesame oil.
5. Toss everything together and simmer for 2–3 minutes until sauce thickens.
6. Serve hot over rice or noodles. Garnish with sesame seeds and green onions.
Notes
Swap veggies based on what you have broccoli, mushrooms, or zucchini work well.
Add crushed peanuts or cashews for extra texture.
