Description

Ingredients

2 cups cooked brown rice

1 pound chicken breast diced

1 cup peas and carrots

2 green onions sliced

2 garlic cloves minced

1 teaspoon ginger

2 tablespoons low sodium soy sauce

1 teaspoon sesame oil

1 tablespoon olive oil

2 eggs


Instructions

1. Cook chicken in olive oil until fully cooked.

2. Add garlic ginger and vegetables then sauté.

3. Push ingredients aside and scramble eggs.

4. Add cold rice and stir fry over high heat.

5. Mix soy sauce and sesame oil into rice.

6. Top with green onions and serve warm.

Notes

Use cold rice for best texture.
